Application

This unit describes the skills and knowledge required to manually, or with the aid of a machine, seal the bung.

This unit is applicable to workers in abattoirs and knackeries.

All work should be carried out to comply with workplace procedures, customer requirements and product specifications.

This unit applies to individuals who work under broad direction and take responsibility for their own work including limited responsibility for the work of others. They provide and communicate solutions to a range of predictable problems.

No occupational licensing, legislative or certification requirements are known to apply to this unit at the time of publication.

This unit must be delivered and assessed in the context of Australian meat processing standards and regulations.

1. Prepare equipment and materials

1.1 Select and prepare materials for the procedure according to workplace standards

1.2 Clean equipment and materials to workplace requirements

1.3 Check and maintain machinery or equipment, if used, in accordance with workplace requirements

2. Seal the bung

2.1 Explain purpose and importance of sealing the bung

2.2 Seal bung in accordance with workplace requirements

2.3 Identify sources of contamination and cross-contamination and minimise contamination

2.4 Identify and meet workplace health and safety requirements

Performance Evidence

The candidate must manually, or with the aid of a machine, seal the bung.

The candidate must:

  • seal bung to workplace standards
  • apply relevant regulatory requirements
  • apply communication skills relevant to work instructions and Standard Operating Procedures (SOPs)

Knowledge Evidence

The candidate must demonstrate a factual, technical, procedural and theoretical knowledge of:

  • anatomy relevant to sealing the bung and the importance of correctly sealing the bung
  • work instructions and workplace health and safety requirements
  • potential for contamination and cross-contamination
  • relevant regulatory requirements

Assessment Conditions

Assessment must be conducted in an operating abattoir or knackery.

Competency must be demonstrated at normal chain speed.

As a minimum, the following three forms of assessment must be used:

  • quiz of underpinning knowledge
  • workplace demonstration
  • workplace referee or third-party report of performance over time

Assessors must satisfy the current standards for RTOs.
